Always Put A Cookie Sheet Under The Pie Pan

I made the best chicken pot pie I've ever made tonight.  The crust was so incredibly flakey.  The chicken tender, the carrots and potatoes were so flavorful.  Unfortunately I only got four bites of it.  That's all that was left after I served the family and the oven.  That's right the oven got to eat tonight.

Everything But The ... OH MY!

My Tommy just had some good news at work.  In order to celebrate he brought this home:

 

 

WOWZERS.  We typically only get Breyers All Natural and add our own toppings, fruit, and such to it.  But this.  There are not words to describe.

 

Definitely celebratory worthy!

Homemade Hamburger Buns

YUMMY!  I was really worried about the recipe.  It just didn't seem right.  No kneading, only 20 minute rise time ... seemed too good to be true.  Boy, was I wrong!  I did let mine rise longer. I let them rise until I absolutely needed to get them baking.

A Week of Food, Day 6

We didn't take any pictures of our food today.    Thursday is typically errand day.  Yesterday was Thursday.  We didn't run any errands.  The cupboards were b-a-r-e!  We were supposed to run errands first thing in the morning.  My Tommy ran out of gas.  By the time he walked home, got back to the car with the gas can, returned home, and we were all finally buckled in the car we just stopped and got doughnuts and smoothies on the way to the grocery store.  

 

On the way to the grocery store we passed a yard sale and just about wiped them out!  My Tommy bought an old wooden high chair, a book case, and an old sewing table that we are going to turn into an end table.  He's good to me.  He said it was my Mother's Day present.  LOL.

 

We had a lovely family over for dinner.  My children absolutely delighted in being around their children.  My Tommy and I also very much enjoyed the fellowship!  We had bbq'd chicken, grilled squash and zuchinni, grilled potatoes and onions, and raw carrots.

 

So no pictures.  Our company suggested that we draw what we ate.  Maybe we will.

Okay, I'm almost- no, not almost, I AM embarressed to show todays meals.  I promise we did snack on raw veggies throught out the day!

Week of Meals, Day 4

Well, I do not have a picture of Breakfast or Lunch.  I thought that my charger was in the car plugged into the lighter and my battery was dead.  However, it was in my camera bag along with the extra battery.  Go figure.

 

Here's dinner though.

 

 

Chicken, Potatoes, Carrots and Onions

 

Breakfast was yogurt and bananas.  Lunch was baked tortillas and cheese with applesauce.

Whole Wheat Strawberry Banana Muffins

Sharon asked for the recipe so here it is: (I adapted it from Mimi's Giant Whole-Wheat Banana Strawberry Muffinsoff of allrecipes.com)

 

  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil (or coconut)
  • 3/4 cup packed brown sugar (or half a cup of honey)
  • 1 teaspoon vanilla extract  (or almond extract)
  • 3 bananas, mashed
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 cup frozen sliced strawberries (i had some fresh that needed to be used)

     

    1. Preheat the oven to 375 degrees F (190 degrees C). Grease 12 large muffin  cups, or line with paper liners.
    2. In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine the flour, baking soda and cinnamon; Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Spoon batter into muffin cups until completely filled.
    3. Bake for 20 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.

    A Week of Food, Day 1

    There is a photographer in NY that photographed everything he ate for an entire year.  Every meal, every snack, every day.  He then turned his meals into a book.  We have decided to go ahead and do this for a week.  It ought to be fun.  Abigail and I are already enjoying thinking of ways to make our food more visually appealing.  We are looking foward to the challenge and hope to make it more of a habit to make our table beautiful.

     

    Here is breakfast, Day 1.

     

     

     

    Whole Wheat Strawberry Banana Muffins, oranges, and coffee/juice.

     

    Lunch/Dinner, Day 1 

     

     

    Chicken Quesadilla Soup

     

     

    Evening Snack

     

     

    Cucumbers, snow peas or carrots, and cinnamon yogurt.

     

     

    I didn't do too hot.  I forgot to take a picture of the oranges and pretzels we snacked on.  I also didn't include my coffee and water all day.  However this has been fun!

    Rainy Days

    There is something about an occasional rainy day.  The kids and I have been practicing recipes we are entering into a recipe contest.  The house smells lovely, the kids have chocolate smeared on their cute little faces, and it's like God is setting the pace with the rythm of the drizzling rain.  My coffee tastes warm and comforting and that's the way my home feels. 

     

    The kids and I are getting ready to test out the carpet cleaner we borrowed from my Mom.   (She's had it longer than I've had Ian and never used it.  LOL.)  You would think we were going to the library or something as excited as Ian is.  He delighted in helping put it together.  It was the last thing on his mind when he went to sleep and the first thing he thought of when he woke up. 

     

    Things just seem more special when it's raining.
