Last night I had a chicken in the oven and instead of mashed potatoes, made steamed red. The children have been asking for soup, which I love to have for lunch for various reasons, so while the chicken was baking here is what I did for a quick soup for lunch the next day.
- put on some water and any frozen broth to simmer, add lots of salt and pepper if your frozen broth isn't seasoned
- add frozen mixed veggies, the remainder of any other frozen veggies need to use
- take some drippings off chicken and add to soup
- add bunch of millet and rice to the simmering broth
- cut up some of the finished potatoes and add to soup
- if still not flavorful enough, add more drippings
- add as much chicken as you can spare after eating dinner
- sprinkle in a lot of onion and garlic powder, plus a good bit of parsley
- for more depth, add a tiny bit of olive oil or butter
The next day, make silver dollar pancakes and keep back one for each child to eat with their soup and crackers. Grind extra flour to make bread making go faster later in the afternoon :). |
