Meals from Leftover Chicken
- Day 1-roast chicken in oven, steam peeled potatoes, make veggies
- Night 1-place chicken, water, onion, carrot, seasonings in crock-pot on low overnight to make soup stock. Soak bag of black beans.
- Day 2-strain broth from crock-pot, put in large pot on stove. With potato masher, mash leftover potatoes from last night's dinner, puree leftover veggies, cut up some carrot-add all to broth and simmer. Add a can of tomatoe sauce, seasonings. If desired, add quinoa/millet/rice/noodles. I omitted left over chicken for use in a casserole tomorrow and used quinoa and millet.
- Cook beans in water, add several ladels to soup. To reserved beans add an undrained can of corn and some rice. Bring to boil, reduce heat with lid on for 15 mins to cook rice. I used jazmine rice, season to taste (I added salt, white pepper, garlic pdr, onion pdr, cayenne pepper). Just eyeball the amount of rice with the liquid. The goal is to use up all the liquid so you get a nice pot of black beans, corn, and rice--a complete protein vegetarian meal. For added flavor add some of the chicken broth to this liquid prior to cooking rice.
