Here's what on the menu plan for the week.
Monday: Meatloaf, Boiled Potatoes, Spring Salad
Tuesday: Meatloaf, Boiled Potatoes, Green Beans
Wednesday: Meatloaf, Spring Salad, Cottage Cheese or Cheap Pizza if Loaf isn't available (Meatloaf was made Sunday)
Thursday: Baked Chicken Thighs with Barbeque Sauce, Macroni & Cheese, Broccoli
Friday: Baked Chicken Thighs with Barbeque Sauce, Spring Salad, Corn
Saturday: Baked Fish, Broccoli & Cauliflower Mix, Cottage Cheese, Rice & Some Surprise Sauce (not sure yet, lol)
Sunday: I'll probably look at all of your recipes and try to adapt one of them for this day or Spaghetti will do
Recipes:
Meatloaf:
Between 5-6lbs ground beef, 3 cans cheap spaghetti sauce, half of a large box of rice, 5 eggs, 1each large red onion & bell pepper chopped, 2tsp pepper; celery & parsely flakes (didn't measure, just add them to your own liking) Mix together everything except can and a half of spaghetti sauce, Put in one very large pan or several smaller ones, Cook at 400 deg. for first 15 minutes, 350deg. for 1hour, Take out and spread rest of sauce on top, Switch pans around on rack, Cook for additional 30 min or so
Spring Salad is something that was premade and bought from Sam's, I believe it is Newman's Own Organic Spring Salad. The first time my husband saw this he was like no way am I eating that. I got him to try it and now he eats it happily. My kids love salad so it wasn't a challenge there.
The rest of the menu I hope is pretty self explanatory. I often cook without real measuring and this is close to the recipe as I can get it. Enjoy!
