Menu Plan Monday - March 19th

Our menu this this week will be simple. There will be a repeat or two since I didn't get to making them last week due to happy unforseen events.

 

Monday: Grilled Cheese, Mixed Fruit, & Tomatoe Soup

 

Tuesday: Hawaiian Chicken, Cali Mix, & Applesauce

 

Wednesday: Leftover Chicken &  Peaches (sugar free canned)

 

Thursday: Hamburger Helper, Green Beans, & Mashed Potatoes

 

Friday: House Sandwhiches, Pineapples Slices, Cottage Cheese & Chips

 

Saturday & Sunday: Fly By The Seat of Our Pants (triplets birthday weekend ((post later on this-be sure to stop back)) and we will be eating to suit the mood and requests)

 

Hawaiian Chicken (our modified version):

8 chicken breasts (frozen is fine)

1 large box of rice

2 large cans cream of chicken soup

2 cans crushed pineapple

1 small bag shaved coconut & possibly some pecan parts

Approximately 4 TbSp brown sugar, 3/4 tsp ginger (mix together)

We have a very large pan. You may need two. Oven at 375* Place chicken in pan, lay in uncooked rice on and around chicken. Mix together soup, pineapple with juice in can, and spice mix. You may need to add a bit of water to get right consistency. I'm sure I will. I just am not sure how much and I will be eye spotting it. Put soup mix on top of chicken and rice. Top with coconut to your liking. Use the whole bag, part of the bag or if you don't like it - don't use it. I'm likely to toss a few pecan parts on top too. Tin foil whole thing. Put in oven for a little over an hour. Remove tin foil for a bit to help brown top and toast coconut; approximately 15 additional min. Take out, let cool a little and serve and most important; ENJOY!

 

House Sandwhiches:

Deli Turkey, Ham, Salami, & Pepperoni

Reg Cheese, Swiss, & Pepper-Jack Slices

Regular Wheat Bread

Mayonaise, Mustard (reg & honey), Ketchup, Salad Dressings

Red Onion, Tomatoe, & Pickle Slices or you can use Dill Pickle Relish

Salt & Pepper 

Everyone gets to choose from this list of ingredients to create their perfect House Sandwhich. Mmmm Mmmm good!

I bought 5 cans of tom soup yesterday (had a coupon that doubled :)) so I imagine grilled cheese & soup will find its way into our week too!

I'm having a terrific time, visiting the Menu Monday participants and watching Paula Deen cook with butter. She's making Macaroni and Cheese in a crockpot. It looks lethal!
