Keeper2Be had a 'craving' for something particular for breakfast this morning.
My own mother used to make these for me while I was at home.
Darling hubby loves to eat them, too.
What is it?
It's a fried egg sandwich.
And oh-so-simple to make.
Just break your egg onto a heated skillet, coated in an olive oil non-stick spray.
Then cook till done.
In our family, they like the yolk to be runny, so to do that just don't break it.
To cook the yolk firm, break it while it's in the pan.
I add a little pepper, a little onion powder, and sometimes a little cayenne pepper.

Serve on toast (or an english muffin) with light mayo and cheese.
Of course, you could always add what your family likes, too.
For instance, bacon or sausage, spinach or tomato, etc...
