What's Cookin' ~ Menu for 12/1 to 12/15

It's been almost a month since I've posted here, due to our move.

We are settling in nicely, though, into our new home.

(Read about it here)

 

Since we're getting settled in, it was time to sit down

to begin making menus again.

 

Here's what we're doing for the next two weeks:

Fri. 1 ~ Pizza (cheese; Spicy Surprise; buffalo chicken; taco)

Sat. 2 ~ Philly Cheese Steak Sandwiches/fries

Sun. 3 ~ Skillet Beef Stew/rolls

Mon. 4 ~ Sloppy Joes/mac & cheese

Tues. 5 ~ Wet Burritos

Wed. 6 ~ Chicken & Rice-a-Roni

Thurs. 7 ~ Lasagna/garlic bread

Fri. 8 ~ Sourdough Pizza & cinnamon sticks

Sat. 9 ~ Meatballs & Fried Taters/veggie

Sun. 10 ~ Roast/rolls

Mon. 11 ~ Shredded Italian Turkey/brown rice/veggie

Tues. 12 ~ Tacos

Wed. 13 ~ Ground turkey, brown rice & green bean casserole

Thurs. 14 ~ Steak Strips/Ranch mashed potatoes/veggie

Fri. 15 ~ Sourdough Pizza

Menu from Our Empty House...

On our HomeSchool Haven Blog,

a friend of mine left a comment asking me to share our menu

while we were spending our meal times in our empty house.

Since we are unsure as to how long we'll be here

I only made a menu for a week instead of two.

 

 

"Frugal" Menu for a Week in Our Empty House:

 

Mon. 10/23 ~ Black Beans & Brown Rice (optional tortilla)

          (salsa mixed in for mexican flavor)

Tues. 10/24 ~ Sloppy Joes/fries

         (note: sloppy joes are made with ketchup/mustard/etc...)

Wed. 10/25 ~ Ground turkey, brown rice, and green bean casserole

         (only using half a pound of ground turkey)

Thurs. 10/26 ~ Tacos

         (made with half pound ground turkey and refried beans)

Fri. 10/27 ~ Homemade Pizza

         (unfortuneately, not sourdough but still homemade)

Sat. 10/28 ~ Chicken and Brown Rice casserole

         (one small pkg of chicken breast, cubed, with rice & seasonings)

Sun. 10/29 ~ Spaghetti/garlic bread

         (either meatless or half a pound of ground turkey)

 

 

 

To cook, I set aside my iron skillet, a 2 quart glass pot,

a 9x13 baking dish, and a round cookie sheet/pizza pan.

 

It was a blessing to get all that we needed for around $60.00

Wed. 23 ~ Steak Sandwiches on french bread/Ranch mashed potatoes

Thurs. 24 ~ Hamburger/Rice/Green Bean Casserole

Sat. 26 ~ Corned Beef Hash/peas & carrots

Sun. 27 ~ Cheesy Ham Casserole

Mon. 28 ~ Steak strips/mashed potatoes

Tues. 29 ~ Wet burritos on lettuce bed

Wed. 30 ~ Meatballs & fried potatoes/green beans

Thurs. 31 ~ Jambalaya with tortillas

Beef Stroganoff...

Last night on the menu was Beef Stroganoff.

I have to admit that it was the first time I had made it

but it went over very well with everyone.

They said it was a dish that they would like to be served again.

With that success, I thought I would share how it was made.

I didn't really use a recipe, so there are no exacts.

 

 

Beef Stroganoff

 

1 lb. ground turkey                                  

1 container lite sour cream

1-2 can(s) of cream of mushroom soup

1-2 pkg(s) of italian dressing mix  *ά*

beef broth

shredded cheese (optional)

pkg of egg noodles (or other curly noodles)

 

Cook ground turkey in skillet. Mix in 1/2 to 1 pkg of italian dressing mix.

Add and stir in sour cream, cream of mushroom soup, and beef broth (apprx. 1/4 cup).

Add more beef broth, if needed, to thin out.

Cook noodles according to package. Drain and return to pot (or a bowl).

Mix in 1/2 to 1 pkg of italian dressing mix to noodles.

Serve beef stroganoff atop the noodles.

You can also use rice or mashed potatoes instead of noodles.

Sprinkle with cheese, if desired.

The Menu Board

Being a military wife, I find it easier to plan a menu every two weeks.

We keep our menu posted on the refrigerator for everyone to see.

I make a menu and then make my grocery list based upon the menu.

We do not necessarily follow the menu faithfully, but more or less, we do.

Some days we will swap meals around... depending on the situation...

like if Mama Keeper forgot to set out such and such... *ά*

 

I'm going to be sharing our bi-weekly menus in The Menu Board category.

I will try to provide recipes for some of the meals in The Recipe Box,

though some of them are pretty simple and basic and don't require a recipe.

Titus 2:3-5
