Apr. 19, 2006 - Low-Carb Chai Tea Latte
One of the things I have REALLY missed since I have been low-carb dieting is my occasional Chai Tea Latte from Starbucks. Well, yesterday I was thinking about it and thought "Maybe I can make one at home." I tried it and it is really tasty!! Here is my recipe:
Seep 1 Organic Zhena's Gypsy Fireside Chai Caffeine Free Tea bag for 5 -7 minutes in boiling water.
(I made it in my Starbucks insulated cup and filled it a little more tha 2/3 rds full with water.)

Remove tea bag and add:
3 tablespoons cream
1 tablespoon of Splenda
Stir.
Top with Reddi Whip >1carb per 2 tablespoons
Drink!
I am thinking I may have to get one of those nifty frothers the Bartista's use...Then I will have acheived perfection! (All while still living Low-Carb!!!)
I think I'll go make one now...

pepperoni
cheese
olives
dill pickles
carrots with blue cheese dressing
Sometimes I make a plate of all of the above for a quick and easy low carb lunch.

Here is what we will be having for our low-carb Easter:
Appetizer:
Low Carb Artichoke Dip with celery
Main Course:
Ham
Salad
Low Carb Green Bean Casserole
Low Carb Deviled Eggs (substitute Splenda for sugar.)
Dessert:
Low Carb Cheese Cake
For the kids we will also be having Scalloped Potatoes.
Sounds Yummy to me!!!

Apr. 15, 2006 - Low Carb Green Bean Casserole
Combine:
8 ounces cream cheese
3/4 cup parmesean cheese
1/2 cup butter
1/2 cup cream
1/2 carton finely chopped mushrooms
2 cloves garlic crushed
Heat in microwave about 3 minutes to melt together
Add 2 can drained green beans.
Top with 1 cup McCormick Salad Topping (30 carbs)
Bake at 350 degrees for 30 minutes until hot and bubbly.

Apr. 11, 2006 - Low Carb Artichoke Dip
8 ounces cream cheese (0 carbs)
1 cup mayonaise (0 carbs)
1 cup sour cream (0 carbs)
1 cup parmesean cheese (0 carbs)
1 8.5 ounce can artichoke hearts sliced into small pieces (6 carbs)
mix together in a small casserole dish.
Top with 1 cup mozerella cheese (0 carbs) & bake for 25 minutes at 350 degrees.
Serve with celery to dip.(0.9 carbs per stalk)
Serves 4 at 1 1/2 carbs per serving for dip + 0.9 carbs per celery stalk.

Apr. 10, 2006 - Low Carb Leek Soup
32 Ounces Chicken Stock
16 Ounces Cream
3 Leeks sliced in 1 inch pieces
1/2 stick butter
1 Clove garlic
Combine Chicken Stock and Cream in a pot, start cooking over a medium heat.
Sautee Leek in butter and garlic until tender and starting to brown. Add to Chicken Stock/Cream mixture.
Bring to a boil. Reduce heat to low and simmer for 15 minutes.
Serve with chunks of cheese to melt in soup.
Enjoy!.

Apr. 10, 2006 - Low Carb Cheese Cake
16 ounces cream cheese
1/2 cup Splenda
1 cup sour cream
2 eggs
1 t. vanilla
Blend together in blender or with a mixer.
pour in a glass pie pan.
Bake in a water bath for 55 minutes at 350.
Yummy!!
If you want to make a savory cheesecake
you can omit the Splenda and add feta.
I like feta with sundried tomatoes.
But, most of the time we make the sweet one.
We always make 2 at a time because the kids like it too.

Apr. 10, 2006 - Low Carb Chicken Alfredo
4 chicken breast wrapped in ham (0 carbs)
1 can black olives (11 Carbs)
1 jar Classico Sun-Dried Tomato Alfredo (24 carbs per jar.)
1 Cup Mozerella (0 Carbs)
Bake at 350 for 35 - 45 minutes until chicken is
cooked through. 4 servings at 8.75 carbs each.
We served ours with a side of baked garlic
and a salad.
