Restoring Order (Part Two)

 

Well, I did my menu plan, which worked out well this week.  It was so nice to come home after a long day yesterday and smell my Nacho Pumpkin Soup cooking away in the crock pot! 

 

I did not get anything accomplished in the winter clothing area, unfortunately.  We were so busy this week, which was a wonderful blessing:  it's great to be out and about with friends, enjoying the warm weather!  Yesterday was in the 80s, and we got our math and grammar lessons done early so as to enjoy the afternoon at a fun birthday party!  This time of year, I'm so thankful that we homeschool, and that we are free to do these things.

Isn't there some rule about mentioning a recipe without including a recipe or a link to said recipe. If not, there should be. Nacho Pumpkin Soup sounds delish. Please share.

Here you go:

Nacho Pumpkin Soup

*One large can pumpkin puree (unsweetened)
*One can diced tomatoes with chilis
*4-6 cups broth (I usually use homemade chicken, but I've also had it with vegetable broth, and a friend of mine made it with clam broth, yum!)
*1 Tablespoon chili powder (or more to taste)
*the equivalent of two bags of frozen veggies. Use whatever you like. We like it with a bag of frozen cauliflower, 1/2 bag of corn, and 1/2 bag of green beans. You can use fresh instead if you want.
*You can put in a can of black beans if you want, but I never do this.
*salt/pepper to taste

Dump all of the ingredients in the crockpot. Stir. Set on low for 8 hours. (If you're using frozen cauliflower or broccoli, break it up before putting in the crock pot)

Serve with a dollop of sour cream and a small handful of shredded Mexican or cheddar cheese, if desired.

If yo'ure doing weight watchers (which I am), the soup without the cheese and sour cream is one point per serving, or two points if you use the black beans!
