Why is it so hard to throw away a black banana? I hear my mother's voice telling me how wasteful I am to throw away fruit that's just a "bit past ripe." And when I daily see people truly hungry and without basic necessities, it's really hard to throw away even a black banana.
Tammy's Recipes gave me a great idea --
Whole Wheat Banana Pancakes.

I changed her recipe quite a bit. Since I had no wheat germ, I used instant oats instead. For her two cups of whole wheat flour, I substituted 1 cup of wheat flour plus 1 1/2 cups of white flour. I also added 1/4 cup of sugar.


This recipe made a monster batch!
And they are very hearty, so DD and I could only eat one each.
(DH doesn't like bananas, but he's on a low-carb diet, so he was actually grateful that I made pancakes he doesn't like. Yes, the bagels were too much temptation for him last week. I'm a bad woman.)
We have lots left in the refrigerator. I think I'll go get one for a snack...

My dear friend has been teaching me the health benefits of freshly ground wheat. According to her information, 1/2 the nutrients of flour is lost within a day of grinding! Yet freshly ground wheat contains like 44 essential vitamins! That makes those pancakes exeedingly healthy. Have another one! :-)
P.S. I tried the bagels. YUMMY! Even my DH said they were really good. dd16's boyfriend wants to come watch me make the next batch.

Well I am impressed by the fresh ground flour!
Black bananas aren't a problem around here. My 3 year old literally will eat a whole bunch in a few days! I have to hide them if I want to make something!
