July 7, 2007 - Sausage from Scratch

This is my homemade sausage recipe. I tried many different recipes and adapted them until I got the right combination that my family likes.

 

1 KG (2.2 pounds) ground pork

1 pinch ground cloves

1/2 tsp. crushed red pepper

1 tbsp. sugar

2 tsp. marjoram

1 tsp. black pepper

2 tsp. salt

3 tsp. ground sage

1 tsp. thyme

You simply mix all the ingredients with your hands to make bulk pork sausage.

 

I usually make three kg at a time and freeze it. It takes just as much effort to make three kg as one, so why not stock the freezer?

 

Homemade sausage has some real benefits over store bought. When you make it yourself, you can control the fat content by buying leaner pork. You can also eliminate all those strange chemicals that are in all processed foods, many of which cause cancer.

Like the crown? The princess has to dress for breakfast.

This sounds delicious! We make our own venison sausage, but buy the seasoning. I'll have to share this recipe with my dh. I enjoyed reading your blog for a bit this morning.

Just the other day I was looking on google for a homemade sausage recipe without all those chemicals! (Great minds think alike! :-)) I've got a good bit of ground deer meat in the freezer and we love sausage! Thanks so much!

My MIL talks about how they used to make their own sausage, but I believe they linked theirs. I never thought about making my own bulk sausage. I might have to try this! YUM!
