July 26, 2007 - English Muffins from Scratch

In my wonderful More with Less cookbook, I saw a recipe for English muffins that I was eager to try!

I was startled to learn that English muffins are NOT baked!  They are cooked in a pan on the stovetop like a tortilla. (I filed this tidbit of trivia in the back of my mind for days when we've no electricity and I want to make bread.)

After shaping the dough and letting it rise, you carefully ease the muffins into a skillet or griddle to cook. I was sure they would collapse, but they turned out terrific.





These, some homemade sausage patties, some cheese, an egg, and you have a "Jimmie McMuffin!"

My sweet DD had no idea what an Egg McMuffin is. See, in homeschool, even breakfast can be learning. She learned an important aspect of American culture -- a McDonalds breakfast staple. Goodness forbid that she be in USA and someone offer her an Egg McMuffin and she not recognize it!

Yep, you never cease to amaze me! Those look like the ones I buy at the store. And I'm so glad you are preparing your daughter for all the great American culture she is missing. I mean, can you even call yourself an American if you don't know what an egg Mcmuffin is? It's like baseball and apple pie. And now her education is complete.

That's amazing. I had no idea either and I WOULD have felt bad about it, but you didn't either, so I'm happy I wasn't the only one. fried in a pan, huh? weird.

These look great! Would you believe I may just have to try that recipe? Here in England, we don't actually have 'English Muffins'!!!!!!! They have something they call a 'muffin' but they are very heavy and dense without the lovely 'nooks and cranies' (how do you spell 'cranies'?) Anyway, well done!

That looks great..I wish I had the cooking gene..Its just not who I am..I would show up at anyones house who was willing to make me such a treat but I not sure I could see that on my stove..unless the hubby made it..It looks so tasty

Wow, first the bagels and now the English muffins. I think I'm going to try and find myself a copy of this book.

Wonderful!! My problem with all bread products (beside wanting to eat them all) is that my dough never rises. It could be a blessing in disguise. :)
