October 13, 2007 - Japanese Cheesecake
I made a cheesecake. It wasn't that kind of dense, super rich American style cheesecake that I think of when I hear "cheesecake." This was Japanese style cheesecake. (Click for the recipe I used.) It's much lighter, fluffier. Can you imagine a sponge cake cheesecake? This would be it. My friend (the one who made the homemade mooncakes) gave me a piece of cake which I thought was creamcheese pound cake. She told me it was Japanese cheesecake. Thus started my quest to discover this delicious treat!
You are supposed to beat the egg whites. Here is my trusty beater. This is cooking from scratch, isn't it? Whew... you can guarantee my egg whites were not whipped as high as they should have been but instead just as long as I had energy to turn that handle!

I have been on the lookout for a mixer for five years now. I know that one day I will find one! (I need to buy it locally because of the electrical current and plug difference.) Below you can see how much I whipped them. Not too great, but it worked.

Now my batter was ready to be baked. The recipe says to put the pan into a roaster of water! I have no roaster, and my oven would be too small for one anyway. So instead, I used the largest pan I can fit in my oven -- a regular 13 x 9 inch pan -- and floated the cake in it. It worked GREAT! In fact, my oven is obviously not level. Most things I bake come out crooked. But by floating this cake pan, it came out even. Nice.

Oh, yes, it's light. So light that after it cooled sufficiently (but was still lusciously warm), I ate one fourth of it -- two pieces!! Here's the cake sans my "taste testing." I deemed it a success. I'll definitely make it again. But I will double the recipe. This is just not enough!

That sounds yummy! I love cheesecake, but have honestly thought that they are often too heavy! This sounds supurb, and I'm bookmarking the recipe. (I have a beater like yours, from my Grandmother, but I think I'll use my electric instead of the "Proverbs 31:17 model". (She maketh her arms strong...)

As to your quest for a mixer, can you not find one at some kind of restaurant supply place? And I'm totally laughing right now because I am almost certain my mixer IS made in China!

That looks really, really good. :) I am with you on the graphic thingy. Seems no one scored the way they 'should' have. And I didn't notice the girl and her lack of, um, garments because I was so focused on the spinning. Yikes!!! :)

The picture reminds me of a custard pie my grandmother use to make (only no crust) We are big fans of the rich heavy kind of cheesecake, but this looks interesting.
