March 3, 2008 - Cream of Mushroom Soup

I wanted to make chicken croquettes for my husband and for Sprite. It's a lot of trouble, but it's also one of their favorite meals. So my first step was making the cream of mushroom soup.

I actually can (at least sometimes) buy it canned,  but I had none on hand, and a trip was out of the question. It takes hours of time and lots of frustration for a trip to where I can get cream of mushroom soup. Besides, I had some mushrooms and plenty of fresh milk in my refrigerator. So I made my first batch of homemade cream of mushroom soup.

Here are the chopped mushrooms and onions sauteeing in my wok.


I used the recipe for Basic White Sauce (plus mushrooms) from More-with-Less cookbook.  This particular recipe features four variations depending on the thickness you desire -- thin, medium, medium-thick, and thick. I made a double portion of the medium-thick to resemble canned, condensed soup. I did feel that it was the same consistency and so much more tasty! Canned soup simply tastes salty. But homemade tastes rich and even a bit sweet.

1/2 cup chopped mushrooms
2 Tbsp. finely minced onion

saute until soft; remove to a plate or bowl

6 Tbsp. butter
melt in pan

6 Tbsp. flour
1/2 tsp. salt

add to butter and use whisk to mix

1 cup of milk
1 cup of chicken stock
add to butter and flour mixture, stirring with the whisk until smooth and thick. Add back the mushrooms.


I used one portion as is for the croquettes and the other portion I saved back to eat as soup. I added more sliced mushrooms to the hot soup in the bowl and gave it to Sprite the next day.

You have learned to be quite an adventurous cook with even the simple things, haven't you? I LOVE the "More With Less" cookbook, althougth I don't use it as often as I should.

Did everyone enjoy their croquettes?

Oh Yummy, That looks so good. Never thought about making homemade cream of mushroom soup. I may just have to try that some day.

I love making our own cream of mushroom (or other COW-cream of whatever) soup!

I love croquettes too, but rarely make them. LOVE them fried, but hate the greasy frying mess in my kitchen. I've thought of taking my electric fryer (which we named Tuck--yeah, Fryer Tuck) out on the deck to fry in the summer.

This made me hungry for croquettes again! Yours look yummy, and are a bit different than the kind I'd done. I'll have to try yours! MMMM!

Mmmm... I love homemade cream of mushroom soup! I like to just slice the mushrooms to make it extra hearty... oh and add pepper. Beats the canned stuff any old day!

Although I have a ton of the canned stuff to use in casseroles. Would you like me to send you some? :-)

Wow our pantry is never with out cream soups. I guess I depend on them alot. I never knew you could make it! ( at least not with the same texture etc). I plan on tucking your recipe away and giving it a try.
