Since, pumpkins are all around us this time of year, what better recipe to make than, Pumpkin Yummy. And let me tell you it is one delicious recipe! The first time I ever had it was this past week, when a friend of mine made it and I had two servings of it! She made it with a bunch of of whipped cream to dollop on top of it. My mouth is watering just describing it to you!
You scoop it out onto the plate and it is like pumpkin pie without a bottom crust, then it has a sort of crumbly topping on top. It is wonderful!!!
This recipe is so easy to do, and delicious, you may end up making it a few times before this holiday season is over with. I know, I plan to!

Kid-Friendly Recipe: yummy apple cookies
Yummy is the key word here. I love the idea of teaching children how to cook responsibly for themselves while enjoying the benefits of their wise food choices. They will love these cookies and will cherish their memories of baking them with their favorite grown-up.
Needed:
>1 cup whole wheat pastry flour
>1 teaspoon ground cinnamon
>1 teaspoon baking powder
>1 cup quick-cooking rolled oats
>1/2 cup chopped toasted walnuts
>1 peeled and minced Delicious apple
>1 cup pure maple syrup
>1/2 teaspoon vanilla extract
>1/4 teaspoon salt
>1/4 cup canola oil
>1 egg
>1/3 cup raisins
To Make: 1. Preheat oven to 375 degrees Fahrenheit. Oil a cookie sheet. 2. In a large bowl, combine the flour, baking powder, salt, cinnamon, and oats. Stir in the nuts, raisins, and apple. 3. In a separate bowl, whisk together the maple syrup, oil, vanilla, and egg. Stir into the flour mixture until well blended. 4. Using a wet teaspoon to prevent sticking, drop batter onto the prepared cookie sheet. Flatten the cookies with your fingers to 1/2-inch thick. 5. Bake until golden brown, 10 to 12 minutes. Cool 2 minutes on the cookie sheet, and then transfer to a rack to cool completely.
Makes 3 dozen cookies.
