Chicken Satay with Peanut Sauce CHICKEN 1 ½ lbs boneless chicken breast ¼ cup cooking wine ¼ cup soy sauce 2 T lemon juice ½ T minced garlic ½ T powdered ginger ½ tsp salt Dash of Tabasco Cut the chicken into chunks, combine with remaining ingredients, allow to marinade for a few hours or overnight. To cook, remove from marinade and bake on a cookie sheet at 375 for approximately 10 minutes. SATAY SAUCE 2 T oil ½ cup minced onion 2 T minced garlic 1 tsp ginger 1 T vinegar 1 T brown sugar 1/3 cup peanut butter 3 T ketchup 3 T soy sauce 1 T lemon juice Dash of Tabasco Sauté onion and garlic in oil until tender. Add ginger, vinegar, sugar and stir until sugar dissolves. Add remaining ingredients and cook until well combined.
