It's fall! The weather is cooler and it's time for a family favorite - Cheeseburger Soup ½ lb. ground beef ½ cup chopped onion ¾ cup shredded carrots 1 tsp. basil 1 tsp. parsley 4 T. butter 3 cups water 3 chicken bullion cubes 4 cups diced potatoes ¼ cup all purpose flour 8 oz. all American cheese cubed (I use 8 slices of individually wrapped American cheese) 1 ½ cups milk ½ tsp pepper ¼ cup sour cream Brown beef and onions together, drain grease. Set aside. Cook potatoes in water with chicken bullion. Add carrots, parsley and basil. Add beef. In a separate pot, melt butter. Add flour, stirring quickly to make a thick paste. Add a small amount of milk and stir quickly until smooth. Continue adding small amounts of milk and stirring. Cook until bubbly, stirring constantly. Add milk mixture to potatoes. Add cheese and sour cream. Stir until cheese is melted. Season with pepper. (The original recipe calls for salt but I never add it)
