John just returned home yesterday afternoon. Tonight I'm making one of his favorites- Szechwan Chicken Szechwan Chicken 6 chicken breast halves 6 tablespoons soy sauce 1 tablespoon corn starch 2 tablespoons white wine 2 teaspoons sugar 2 teaspoons vinegar ¼ water oil ½ teaspoon dried red pepper flakes (more or less, depending on how spicy you like your food) 3 green onions (or 1 medium white onion if you happen to be somewhere like Romania where green onions are hard to find.) ½ teaspoon ginger ½ cup or so of peanuts Hot cooked rice Mix 1 tablespoon of cornstarch with 2 tablespoons of soy sauce. Marinate cubed chicken for 15 minutes. Mix remaining soy sauce, white wine, sugar, vinegar and water together. Set aside. Heat oil in skillet. Sauté dried pepper flakes and onions. Add chicken and ginger; cook until done. Add soy sauce mixture and peanuts. Serve with hot rice. Enjoy! Be sure and visti my regular blog, Wired Wisdom.
