Chicken Divan

Chicken Divan


2 cups cooked chicken, cubed

2 cans of cream of chicken soup

½ cup of mayonnaise

1 tsp. lemon juice

8 ounces of egg noodles, boiled and drained

Grated cheddar cheese

breadcrumbs


Arrange cooked chicken in the bottom of a 9x13 pan.  Mix cream of chicken soup, mayonnaise and lemon juice together in a small bowl.  Pour ½ over chicken.  Put noodles on top of soup mixture and cover with remaining soup mixture.  Top with grated cheddar cheese and sprinkle lightly with breadcrumbs. (Or crushed cornflakes if you prefer)  Bake for 30 minutes at 350 degrees.

Beef Teriyaki

Beef Teriyaki

 

1 pound sirloin tips

8 ounces soy sauce

¼ cup white sugar

½ cup brown sugar

chopped onions

4 cloves garlic

½ tsp ginger

 

Mix and marinate meat overnight.  Bake at 350 for 1 ½ hours or on slow cook for 4 hours on high.  This works well with chicken too.

Barbecups

Barbecups

 

Brown ¾ pound ground beef and drain grease

Mix in ½ cup BBQ sauce

Spoon approximately 1 tbsp (or so) of the mixture over a flattened refrigerator biscuit and place in a muffin tin. 

Top with grated cheddar cheese.

Bake at 400 F for 10-15 minutes

Feta Chicken Salad

Yes, I'm still packing.  I thought I could save a little space if I put some recipes on my blog rather than pack them in a suitcase.

Feta Chicken Salad

6 cups diced cooked chicken

4 large celery stalks, diced

2 red bell peppers, seeded and diced

1 red onion, diced

¾ cup mayo

¾ cup sour cream

8 oz. feta crumbled cheese

4 tsp. dried dill weed

salt and pepper

 

In a serving bowl, mix together the chicken, celery, and red onion.  In a separate bowl, stir together the mayo, sour cream, feta cheese and dill.  Pour over the chicken mixture and stir to blend.  Season with salt and pepper.  Refrigerate until served.

Chicken Taco Casserole

Being on the road, I don't have much time for my regular blog and this one gets sadly neglected.  We had this recipe at my sister-in-law's house last week and it was incredible!  I don't like cream of mushroom soup (or mushroom anything for that matter) so I'd probably replace it with cream of celery or chicken.

1 large chicken, boiled and deboned
2 cans cream of chicken soup, undiluted
2 cans cream of mushroom soup, undiluted
1 can tomatoes w/jalapenos or green chilies
1 8 ounce can tomato sauce
2 pkgs. taco seasoning mixes
 
Optional-chopped onions, green peppers, black olives , cheese, when
serving.
 
Put on tortilla shell like a taco, place on bed of lettuce, or use as a
dip for tortilla chips.
 
Enjoy!

Szechwan Chicken

    John just returned home yesterday afternoon.  Tonight I'm making one of his favorites- Szechwan Chicken

Szechwan Chicken

 

6 chicken breast halves

6 tablespoons soy sauce

1 tablespoon corn starch

2 tablespoons white wine

2 teaspoons sugar

2 teaspoons vinegar

¼ water

oil

½ teaspoon dried red pepper flakes (more or less, depending on how spicy you like your food)

3 green onions (or 1 medium white onion if you happen to be somewhere like Romania where green onions are hard to find.) 

½ teaspoon ginger

½ cup or so of peanuts

Hot cooked rice

 

Mix 1 tablespoon of cornstarch with 2 tablespoons of soy sauce.  Marinate cubed chicken for 15 minutes. Mix remaining soy sauce, white wine, sugar, vinegar and water together.  Set aside.   Heat oil in skillet.  Sauté dried pepper flakes and onions.  Add chicken and ginger; cook until done.  Add soy sauce mixture and peanuts.  Serve with hot rice.

Cincinnati Chili

1 quart hot water

2 lbs. ground beef, brown and drain grease

1 12- oz can tomato paste
1 large onion, chopped

3 Tbsp. chili powder

3 bay leaves

1 Tbsp. salt

1 tsp. cinnamon

1 tsp. black pepper

1 tsp. allspice

1tsp. white wine vinegar

½ tsp. cumin

½ tsp. Worcestershire sauce

¼ tsp. cayenne pepper

¼ tsp. garlic powder

1 pound freshly cooked spaghetti

1 cup grated cheddar cheese

 
Pour water into large pot. Crumble in beef.  Add next 13 ingredients.  Simmer 3 hours, stirring occasionally.  Discard bay leaves.  Place spaghetti on serving platter or individual plates.  Pour chili over and top with cheese.  Serve immediately.

Cheeseburger Soup

It's fall!  The weather  is cooler and it's time for a family favorite -
 

Cheeseburger Soup

½ lb. ground beef

½ cup chopped onion

¾ cup shredded carrots

1 tsp. basil

1 tsp. parsley

4 T. butter

3 cups water

3 chicken bullion cubes

4 cups diced potatoes

¼ cup all purpose flour

8 oz. all American cheese cubed (I use 8 slices of individually wrapped American cheese)

1 ½ cups milk

½ tsp pepper

¼ cup sour cream

Brown beef and onions together, drain grease.  Set aside.  Cook potatoes in water with chicken bullion.  Add carrots, parsley and basil.  Add beef. 

In a separate pot, melt butter.  Add flour, stirring quickly to make a thick paste.  Add a small amount of milk and stir quickly until smooth.  Continue adding small amounts of milk and stirring.  Cook until bubbly, stirring constantly.  Add milk mixture to potatoes.  Add cheese and sour cream.  Stir until cheese is melted.  Season with pepper.  (The original recipe calls for salt but I never add it)

Chicken Satay with Peanut Sauce

Chicken Satay with Peanut Sauce

 

CHICKEN

1 ½ lbs boneless chicken breast

¼ cup cooking wine

¼ cup soy sauce

2 T lemon juice

½ T minced garlic

½ T powdered ginger

½ tsp salt

Dash of Tabasco

 

Cut the chicken into chunks, combine with remaining ingredients, allow to marinade for a few hours or overnight.  To cook, remove from marinade and bake on a cookie sheet at 375 for approximately 10 minutes.

 

SATAY SAUCE

2 T oil

½ cup minced onion

2 T minced garlic

1 tsp ginger

1 T vinegar

1 T brown sugar

1/3 cup peanut butter

3 T ketchup

3 T soy sauce

1 T lemon juice

Dash of Tabasco

 

Sauté onion and garlic in oil until tender.  Add ginger, vinegar, sugar and stir until sugar dissolves.  Add remaining ingredients and cook until well combined.
