Manna Bread (Carrot and Raisin)

Ingredients: sprouted organic white wheat kernels, filtered water, organic carrots, and organic raisins.
This “carrot cake-like” moist bread, which contains no added sweeteners, oil, flour, salt, yeast, additives or preservatives was a pleasant surprise to my morning taste buds - quite yummy! I keep the manna bread in the freezer (presliced) and use the toaster to heat and crisp. Another added benefit is the high fiber, and 5 grams of protein. However, if you are looking at carbohydrate and calorie content, you may be a tad surprised to find that this product is high on the glycemic meter at 27 g. of carbs, and 10 g. of sugar. Expect 130 calories for 2 oz. (3/4 of a slice). If you have diabetes, hypoglycemia or other sugar-related concerns, you may want to sparingly eat this delectable delight, or sample to see if you have a reaction. Even though the sugars are considered “good carbs,” because they are from the natural juices found in carrots and raisins, your body may react negatively. Serve with some low-fat butter, or tofu cream cheese spread and you’ll feel like you have gone to heaven. Just a little is all it takes to fill you up, and feel satisfied. Another added bonus is that Manna Bread comes in seven different flavors: carrot and raisin; cinnamon-date; fruit and nut; millet rice; multigrain; sun seed, and whole rye. I can’t wait to try them all!
Information about grain sprouting (from back of bread bag): “Sprouting converts starchy grains into easily digested maltose and other natural sugars similar to those found in fresh fruits. After germinating the grain, we crush and form it into loaves, which are baked at low temperature.”
