Oct. 5, 2009 - Cooking at the Klassens . . .

Thought I would share this recipie it is a favorite at my house

Thai Style Chicken and Noodles

1/2 box whole wheat spagetti

4 tbsp natural peanut butter

2/3 cup salsa

2/3 cup water

3 boneless chicken, cubed

2 tsp soya sauce

6 garlic cloves

2 red peppers, sliced

1.  Cook spagetti

2.  Meanwhile puree peanut buteer, slasa and water for 15 seconds and set aside

3.  Fry chicken in pan till done and sprinkle soya and garlic on top while cooking. 

4.  In seperate frying pan fry red peppers in pan for 3 minutes then add 1 tbsp water and cover and cook 3-4 minutes till tender and slightly blackened.

5.  After chicken is cooked add sauce and turn heat to low.  Stir and cook 2 minutes.

6.  Mix in peppers and Serve.

I know salsa and peanut butter but it is very good.

Sep. 28, 2009 - Moms OF Many--Workouts

Moms of Many Exercise Challenge

About 7 weeks ago I started getting more organized for working out.  I decided to do a buddy system so have 4 days I get together with 2 friends to work out.  The first couple weeks it was harder cause school and house work can seem more important but once I got into routine I have been able to schedule workouts into our weeks.  Plus I get out for a walk a few times a week with my pup and a friend.  It is great to  buddy up cause I dont have to much time for socializing and this way I can do both together. and its not lots of time away from my family.

My Workouts:

Step arobics: 45 minutes

HipHop: 45 minutes

Walk/jogs: 45 minutes

Hope to Keep it up.

Sep. 25, 2009 - October can have days that seem like winter . . . this is my home

OCTOBER   

O hushed October morning mild,

Thy leaves have ripened to the fall;

Tomorrow's wind, if it be wild,

Was written about a New England October but reminded me of Octobers here in Alberta.
