A failed attempt

Oh ok if you are one the road to healthier cooking like me.  I have to warn you against this.

Today I tried to make drop biscuits with coconut flour, so our SuperB could enjoy the biscuits with us. I searched the net to come up with a recipe.  And here is what I found

Drop biscuits

Well that sounded right to me.  I then continued on to see what else was out there.   And just keep seeing the same recipe over and over.  Except for one very fancy recipe.  So I give it a try.

The ingredence are

4 eggs

1/4 cup butter, melted

1/4 cup honey

1/4 teaspoon salt

1/3 cup sifted coconut flour

1/4 teaspoon baking powder.

As I was mixing all this I commented to my wonderful Super Man a few times how this is diffently different.  Then once I have the finished "dough" that is real runny, I commented again.   Took a leap of faith and spooned the runny dough on to the greased cookie sheet, just like the directions say.  And then placed them in the the in hot 400 degree F oven, set the timer for 15 min.  And asked Super Man if he could watch them.  I wanted to check the net and make sure it was this SAME recipe that I thought I saw multipule times.  So about 4 min. before they were supose to come out of the oven I hear.

"Oh No, you are not going to like this!"

"What"

As I come into the kitchen there is my handsome husband leaning over the oven, pering in.  I come over to him and look over his shoulder.  The whole cookie sheet is one big melted together very thin, layer of mostly burnt gew. 

Well I scrapped them off my cookie sheet so I can try again another day. 

So either use this recipe with caution and try to make biscuits and I pray that yours turn out better than mine.  Or learn your lesson from me and don't use this recipe.

Oh the leasons our Heavenly Father allow us to learn!  The best part though is God is smiling because I never lost my pactience or cool.  I am so greatful that my husband is easy going and doesn't mind when I do fail.  And that God blessed with a man that has those attributes and never gives up on me to learn the leasons He has been trying to teach me my whole life!

Healthy Road

With Precious' birthday past and Super B's very soon I have been trying to come up with healthier was to make yummy treats. 

This road has lead me on research and of course a phone call to my God sent Midwife.  Sherry Dress is the most amazing woman I know!!!!  My family has been blessed in so many ways since we have come to know her.  She should be known around the world for her knowledge and wisdom.  Any ways I called her for advice on many subjects and the healthy birthday cake one as well.  What I found out is Spelt flour and Coconut flour. 

They are high in fiber and lower in gluten.  The coconut is gluten free.  And make wonderful cakes!  If anyone else is wanting to find healthier foods, I would recomend researching these flours. 

So for Super B since he is only turing 1 I made him a carrot cake, from scratch.  Which was my first completly from scratch cake ever.  Yep I usually cheat and grab a redimix box add oil, water and egg. And in a 1/2 hour you have a cake.  But not this time.  I shreaded carrots, add my own flour and spices. 

Now as of yet no one has tried it but when they do I will let you know the results. 

I can't believe my little girl is 5 and my BABY  is coming soon to be 1 year old!!  With their birthdays so close together we are having a joint birthday.  Precious is so sweet because I was trying so hard to give them their own birthday parties and she is the one that said she would love to share a party. 

She wanted a horse themed party, so I looked all over the net to see what I could do with that and make it some what boyish.  Well I found a horse themed party pack for real cheap that had blue, green and yellow for accent colors.  Well that led me to a John Deere theme for Super B.  My husband and I are real fans of John Deere and Massyfurigson.  But they really don't make much massy stuff.  So that was wonderful.  So then I went to the dollar store and bought yellow and green stuff and wala are birthday party for a boy and girl all in one!

Advice or research help.

Since I got prego with our son(SuperB) in 2008, we have been changing so much and learning so much.  I have come to find out that organic is really turely good. And you can cure a yeast infection with garlic.  Mastitis pain with potatoes and the list could go on and on.  I have learned that a GOOD midwife is more useful and helpful than anything! 

Now I am on a healthier cooking and baking road.  But I have no clue where to start.  Our family has a sweet tooth and I have always limited what we bring into the house and I have always tried to stay away from high fructose corn syrup.  I really want to cook and bake healthy though.  I do want to make treats, but really want to make them with whole wheat, raw sugar or honey.  I also really want to learn how to die my own food and get away from food coloring, for birthday cakes and that kind of stuff. 

I also really want to learn how to make my own broths and soups.  One day I hope to learn to can and make home made jelly and jams, oh and apple butter!  

I am hoping that you all will point to some good cookbooks or any other useful tool for this road my family and I are on!

VACATION!!!!!!

I am so excited we are going on a vacation!  God has truely blessed us  with this!!! I have not gone on vacation since I was 6 months prego with our daughter.  Well she is 4 years now!  I have been begging SuperMan to takea vacation, but with money tight I knew the most we would probably get is camping.  Then one day I recieved a phone from my old room-mate.  She had just moved to Tillamook Oregon and is going to be away for a while, she wanted to know if we would like to use her house to take a vacation!!!  So all we have to come up with is extra money for fuel. Since we will be staying at her house I will have a kitchen to cook in.   There for we will spend what we usually do on groceries there.  ONLY the HEAVENLY FATHER could of done this for us!!  I hope to have some good pics to share with you all when we return.

Strategically place wood pile!

To give you an idea of how BIG this wood pile is lets start from the beging.  Our wood pick-up is this old 81 Ford, that some one dropped the old back axle and put in a Dodge dully axle in its place.  Then made a oversized flatbed.  It measures close to 8 ft wide by 10ft long!  It can hold close to 4 cords of wood!  Well with SuperMan going to school our wood shed has been coming together very slowly.  So every time we have came home from getting wood SuperMan just backs the truck up to the side of whats going to be the wood shed (right next to the walk way) and kind of throws and kind of stacks the wood.  Just a few days ago we had some family and friends over so SuperMan could have them as an aduiance for his Public Speaking speach.  It was so funny, the men and their HIGH testosterone levels walked by and  had to chop at least one round!  The first one being my little brother.  As he walked in the house the first thing he mentioned was the wood pile.  He and his Wife had to leave early for they were celerbrating their ann.  as he walked by on the way to leave, turned around picked up the spliting maul and choose his round and with one swing split in half.  Look up with a huge grin and ask he got into the car said "I just had to do that!"  I just had to laugh this is my little brother that went away from the country life and took up the suit and tie everyday for work.  Then as my older brother was leaving he too picked up one round and with one swing split his round in half.  With a statisfied grin put on his helemt and left.  Later on while our friends arrived she and I were talking on the pourch while SuperMan BBQ we noticed her husband pick up the splitting maul.  I smiled at her and wispered to her of the earlier events.  And with a huge cracking sound the first round flies in half.  Well her husband had encouragement, their 1 1/2 yr old son gave a out a joyful sqeal.  That was all it took, his daddy split half the pile, just because it delighted his son so much (men really loved to be admired even if its from a baby)!! 

I have always admired my SuperMan's brains and muscles. But after everyone left I told him how impressed I was with his "strategically" place wood pile!!

She's gone!

I can't believe it!  I can't believe someone so young could die just like that!!  The dr.'s said that it pretty muc decapitated her.  That you can't really do anything about it. Please keep my SIL and her family your prayers!  Her husband and her we one of those couples that if they had each other nothing was wrong!  I met them when they were homeless, because he lost his job and you would of NEVER known that they were going through a hard time.  She was so smilely and happy and loving.  I don't think she met one person and not touch them!!!!!!  I don't think I ever saw her without a smile.  My SIL will be planning the funneral.

a new prayer request!!!!!!

I know I have been asking for a lot of prayers lately, but I just got a phone call from mom telling me that my Sister in laws mom just went unconsiouce this morning.  When they got to the hospital they found out is a hemerg on the bottom part of her brain!!!!!!  She is still unconcious and needs lots for prayers!!!!!!!  She is so young I can't believe this is happening,  please keep them in your prayers!  and please continue to pray for our situation!  Thank you all so much!!!

Hide and seek

The home that we had been living in was a very, very small house.  But with a child you play hide and seek anyway.  The other day Precious and Super Man were playing hide and seek. They were having a ton of fun with lots of giggles and sqeals.  When all of a sudden Precious says "its so nice to have hidding places Daddy, we don't just have to hide on the beds anymore!"   Oh what trueth out of a little girl.  We all had  a good laugh.  It truely is nice to have a little more room!  We are enjoying our new home, though we dearly miss the ranch.  Last time we went to the ranch the elk were in the front yard.  And we all said at the same time "we miss that!". The elk would come into our yard every night and during rut, we could hear them even if the t.v. or radio was on.

Infant potty training

Well with Super B we have been trying the infant potty training.  Its going good.  We have been very successful with #2.  But #1 is not doing so well. At least we are half way there!  I can't believe how much Super B knows and can let me know!!  Every morning he wakes me up make a certain sound, and we go sit on the tolite.  If I read his que right, once on the tolite he is VERY content to sit there until he is finished.  I feel that he truely enjoys not having a nasty diaper.  But I was wondering if anyone else did the infant potty training and if so could they give me some tips? 

As for Precious she thinks is wondeful that her little brother is going on the tolite.  She brags to everyone about it.  One person asked me about it because they thought she was makeing it up.  And when I said no they were quite shocked!   She is a GREAT big sister!!  He loves to watch her and she loves to entertain him!
