
Thanks to Mandy over at Mandy's Ramblings I found out about the 2006 Cookie Swap being managed by Amy Beth. In addition to her beautiful blog, she's somehow finding time to do this cookie swap! Here is a recipe for one of my favorite cookies, Sunshine Kisses. When I bake for the holidays, I like to create a variety of goodies that appeal to all kinds of sweet-teeth (is that a word?). These cookies are for those who like lemony goodies. I got it many years ago from a now-discontinued Pampered Chef cookbook.

Sunshine Kisses
1 package (18-19 oz) lemon cake mix 1 egg slightly beaten 1/3 c. oil 2 T water 1/3 cup pecans, chopped
GLAZE 1/2 c. powdered sugar 1 lemon
Preheat oven to 375F. In medium bowl combine cake mix, egg, oil & water. Stir until thoroughly combined; mixture will be dry. Chop nuts & sitr into dough. Using a small scoop drop dough 2-inches apart onto a cookie sheet or baking stone. Bake for 13 minutes or until lightly browned. Cool 3 minutes on stone. Remove to cooling rack and cool completely.
In small bowl, whisk powered sugar, 1-2 T lemon juice & 1 t lemon zest. Drizzle glaze on cooled cookies.
YIELD: 3 dozen cookies
