Naked Apple Pie

I got this recipe a couple of years ago from an email loop that I used to be part of (but I don't remember which one :)). It is VERY rich and delicious! AND easy and quick to throw together. My notes are in ( ) Today I made this for our homeschool group (but no one actually ate any, we were too busy talking, and then it was time to leave :)). I tripled the recipe and baked it in my 12 inch cast iron skillet. NAKED APPLE PIE 1/2 cup all-purpose flour (I use whole wheat pastry flour) 1-1/2 teaspoons baking powder 1 egg 1/2 cup brown sugar (I used sucanat, a natural, unrefined brown sugar) 1/2 cup granulated sugar (For our tastes, it is plenty sweet with the sucanat, so I leave this out altogether) 1 teaspoon vanilla extract pinch of salt 2 large Tart Apples 1/2 cup chopped walnuts or pecans Preheat oven to 350 degrees. Grease a 9" pie pan. Sift together flour and baking powder (I don't sift, I just use my whisk). With electric mixer; combine egg, brown sugar, sugar (I didn't use the sugar, just the brown sugar (sucanat)), vanilla and salt. Beat 1 minute and add flour, continue beating until combined. Peel, core, and thinly slice apples. stir apples and nuts into batter (today I layered the apples in the pan, sprinkled the nuts over the top, then poured the batter over that...it was very yummy, and like a cobbler). Spoon into prepared pie pan. Bake for 30 minutes. Cool completely and serve with whipped cream or ice cream (we like it best served warm, but it is wonderful cooled also). Do not cover pie or it will become soggy. |
