Our family loves homemade cookies. Often I will double a recipe and have our own homemade cookie dough to freeze. Perfect for unexpected company. Nothing smells better or tasted yummier than homemade cookies fresh from the oven.
Like most families, this Memorial Day, we planned a BBQ. After we got home from the cemetary, I went to start on making homemade Banana Pudding. But I didn't have enough eggs. So I went to my newest Everyday Foods and found a dessert that would work with one egg, Giant Sugar Cookies. I'm not crazy about sugar cookies but these cookies were amazing. The whole family loved them. I caught T sneaking one yesterday and today he did it again. He gave A a "hush cookie" and when I asked her if she ate it she said, with a very guilty look, "Yes, but I think I wasn't supposed to," We did have a talk about taking things without permission.
Here is the recipe for the Amazing Sugar Cookies. Prep time is really fast.
2 cups flour, 1tsp baking powder, 1/2 tsp. salt, 1/4 tsp. baking soda
8tbs butter, room tempeture, 1 1/2 sugar, 1 large egg, 1 tsp vanilla extract, 1/4 cup sour cream.
Preheat oven to 350. Cream butter, sugar with electric mixer. Add egg and vanilla and combine well. Mix dry ingredients and add half to the butter mixture. Add sour cream. Add the rest of the dry ingredients and mix well.
Drop about 3 tbs of dough on cookie sheet, 3-4 inches apart. Sprinkle with sugar or cinnamon and sugar. Bake for 15-20 minutes. You may need to rotate your cookie sheets. When done, cool them on a cooling rack and watch them disappear!!!
