Sunday, November 30, 2008 - Menu Planning Monday

I've found myself with a few quiet moments alone at home so thought I would get my weekly planning done.

Great Harvest Bread Co recently opened nearby so I plan to stop by there and pick up some bread for the week. I also need to get some fresh fruit and veggies so hopefully will hit the farmers market or Down to Earth on Tuesday when we go to the beach for Turtle Duty. Here are some things I am planning to cook this week.

S - Pork Chops, Potato Pancakes, Applesauce

M - Miso Soup, Noodles, Salad - I thought this would be a great dinner for nights when it's just the two of us. We recently found Hikari's Minute Miso so I am going to give it a try. Usually we have to buy a huge container of miso and we don't use it fast enough. I plan to add tofu, green onions and a beaten egg to the soup. (The egg thickens the soup and my MIL taught me to use it so I do! *L*)

T - Sweet and Sour Cranberry Stir Fry This should be fast enough to make even after spending all day with the turtles.

W - Crab Legs - Again, another meal for just the two of us.

T - Burgers, Oven Fries - I don't love burgers (Bug does!) but we have some organic beef patties in the freezer so.....

Looks like I need to swing by Organizing Junkie and get some more ideas!

Sunday, October 26, 2008 - Menu Planning Monday

Can you believe another week has gone by already? Me either!

It has been rather rainy and gloomy here in the islands lately and today was no exception. This is the closest we get to "winter" weather here on Oahu...they do get snow up on Mauna Kea and just had the first of this season. Doesn't matter if it melted in 2 hours...still counts! Anyway...it put us in the mood for soup so we made a HUGE pot of Portugese Bean Soup and let it simmer all afternoon. We let the hamhocks simmer through the entire replay of the UH game...Way To Go Warriors! Then added all the yummy veggies and portuguese sausage.  Too ONO!

We had a whole cooked chicken so we have chicken salad already made up with craisins and chopped pecans and some lovely croissants to serve it on. I put the breasts in the freezer until I decide what to do with them later.

We also picked up some Teriyaki-Miso Salmon...we've not had that before so we'll see how we like it and decide if it will make another appearance. We will have that with a salad of cabbage, mandarin oranges, green onions, peanuts, wonton chips and Asian dressing.

Also on the menu this week are Chicken  Enchiladas Suiza but I'm not sure on which night.  That is all I am planning for this week since there will be tons of soup and stuff for salads as well. Can I just say how odd menu planning has become as the girls have grown up? I know I've mentioned it before that C3/Bug is only here for dinner Tues-Thurs-Sat-Sun and C2/Skippy even less so it really does it equate to meal planning 4 nights a week. Salads and leftovers...or the occasional dinner out...suffice the rest of the time for Beloved and myself.

I can only imagine it's going to be even LESS planning and cooking when he deploys....

Monday, October 20, 2008 - Menu Planning Monday

I really want someone to just come in, look at what I have in the kitchen and plan my menu for me. *closing eyes tightly and wishing REAL hard*

 

Swell.

 

It didn't work. No magic menu fairy appeared. I hate when that happens. So now I need to be creative and a good steward of my pantry on my own. *SIGH*

 

Now you may have begun to notice a trend in my menus of late...with the girls both working  (in addition to school) it is only Beloved and myself most nights of the week. Rather than fall into a habit of going out, skipping dinner, or other equally bad options, we've begun to eat dinner salads more often. The girls can fix their own when they get home if they like, as all the ingredients are readily available. I've been cooking eggs, chicken, meat, etc once a week and either putting it in the fridge or freezing the meat if I've cooked enough. I try to make or pick up bread from Great Harvest to go with them. I adjust "recipes" based on what is fresh and lovely in the market that week.

 

M - Southwestern Salad (or Taco or Santa Fe or whatever you want to call it.) (Greens, taco meat, Ono Corn Salsa, tomatoes, kidney and black beans, cheese, corn chips)

 

T - Kebobs (leftovers), Passion Salad (grapes, apples, pecans, cranberries, mango and bleu cheese with Lilikoi Dressing)

 

W - Mediterrean Salad (romaine, feta, pine nuts, grilled chicken, tomatoes, pasta, roasted peppers, purple onions, olives and Greek dressing) w/ warm flat bread.

 

T - Kahuku Shrimp and Spinach Salad (spinach, hardboiled eggs, avocado, bacon, grilled shrimp, and mango (if there's any left) with Poppy Seed Dressing)...I might just grab garlic shrimp from the trucks on the way home...we'll see.

 

F - Mandarin Salad (greens, shredded chicken, mandarin oranges, edamame, green onions, wonton chips, almonds, Oriental Dressing)

 

Weekend - At the conference I attended this past week we were served a lovely salmon with wasabi and nuts that I would LOVE to try. I found this recipe and hope it is really close to the dish I had. This one uses pistachios and the one I had was macadamia nuts I think....so I may change them out.  I am also CRAVING the Pear and Gorgonzola Pizza from California Pizza Kitchen so may talk Beloved into that one night this week....

 

PLEASE leave me any fantastic salad recipes you enjoy at your house!! I'm already thinking about a pear, cranberry, cheese combo for next week.....but then there's lychee, jicama, strawberries, pineapple, coconut, mint, and grilled shrimp...I didn't even think of snap peas, carrots, bean sprouts, cucumbers....

Sunday, October 5, 2008 - Menu Planning Monday

Grrrr! I just finished my entry and then LOST it...so now I need to reaccomplish it. That irritates me. So without all the commentary here is my menu plan for this week.

Breakfast: french toast, pancakes, cereal, eggs, blueberry waffles

Lunch: PB&J, Mac 'n Cheese, Cheese Pizza, hot dogs, fish sticks

Snacks: Yogurt, fruit, veggies, homemade cookies, ice cream

Dinner:

M- Tacos/South West Salads

T - Grilled Cheese/Bacon Sandwiches/Cobb Salad

W - Chicken Nuggets/Oriental Chicken Salad

T - Hash Brown Cassrole (My SIL is coming and LOVES this!)

F - Not sure yet...C1 (dd1) arrives for Cousin's wedding (not sure when) so we will adjust as needed

S - Cousin's WEDDING so no cooking!

S - Crock Pot Chicken Divan (Beloved is home from Germany today!)

Monday, January 28, 2008 - Menu Plan Monday

First, a little followup to some of last week's items: Sesame and Herb Chicken tenders - can I just say...gag? What is it about Food Network's recipes? Following this as is...it was beyond salty! Yuck-o! Adding Black Bean and Corn Salad to my permanent recipe box! Yum-o! Great the second day with blue corn tortilla chips! And my Beef and Barley Soup will appear on the menu again! Reminded us of the beef-barley soup that comes in a recognizable red and white can ~ only better!

On to this week's choices.

Mon: Salmon, asparagus and parsley fingerling potatoes (thanks for the suggestions last week!)

Tue: Easy Cheesey soup (we renamed it!)

Wed: General Tsao's Chicken, edamame, rice

Thu: Pasta and meatballs

Fri: Alfredo Chicken

Teatime: Sweet-Savory Sammies (Raisin bread with pear slices and cheese; grilled til melty and golden.); scones (from Trader Joe's) with creme fraiche, Lady Grey tea (we didn't have teatime last week)
