Banana Recipes
Banana Cake
2 sticks butter, softened but not melted
1 cup sugar
2 eggs
1 cup mashed banana (About 3)
1 3/4 cups flour
1/2 tsp. salt
2/3 tsp baking soda
5 Tbsp buttermilk
1 tsp. vanilla
Cream butter and sugar. Add eggs, one at a time. Add bananas. Mix flour, salt and soda. Add to batter. Add buttermilk and vanilla. Mix for 1 minute. Pour into 2 greased and floured round 8 inch pans, or one bundt pan, or you could even do a 9X13. Bake at 350 for about 35 minutes-- stay close by to check, as it varies according to what size pan you are using! Cool for ten minutes in pan, then another several hours before frosting with buttercream frosting.
Buttercream Frosting
1 cup butter (softened but not melted) I set it on the counter and allow to come to room temp.
8 cups confectioners sugar
2 tsp vanilla extract
1/2 to 3/4 cup milk
Cream butter in mixing bowl. Beat in sugar and vanilla. Add milk in small amounts, until frosting reaches desired consistency. This makes a ton of frosting so I would half this recipe if you are just making one cake.
This is so much better than a can of frosting and very easy!!
The Very Best Plain Ole Banana Bread
2 large bananas (very ripe-- Can be frozen and allowed to thaw for a few hours before using)
1/2 cup melted butter
1 1/2 cups flour
3/4 tsp salt
1 cup sugar
1 tsp baking soda
1 egg
Beat egg and add sugar, butter and bananas. Add this to the flour, soda and salt which have been mixed together. After mixing, put in greased loaf pan and bake at 350 for 45-50 minutes, or until it begins to leave the sides of the pan. This recipe is easily doubled or tripled if you have lots of extra bananas or would like to make these to give away.
I searched high and low for a GOOD banana bread recipe. I wanted one that was just plain-- no pineapple or fancy stuff added in. This one is moist and has the right flavor. I have added a cup of chocolate chips to this one with great reviews from my kids. I tried a lot of recipes using all sorts of combinations til I found this one, which is my tried and true now. Enjoy!
