I wanted to post that coffeecake recipe I wrote about the other day, as it is really good. In fact, I think I posted it here before, but I don't even want to tackle my archives to find it at this point. So, here it is again. The neat part about this one is, you can mix it up the night before, then put the finishing touches on the next morning and voila! Breakfast is served... a yummy breakfast, at that. The buttermilk makes it so moist. You could even serve this with some bacon and scrambled eggs for a yummy change of pace at dinner one night-- I have!
Overnight Coffeecake
1 cup all purpose flour
1/4 cup sugar
1/4 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 cup buttermilk
1/3 cup margarine
1 egg
Combine ingredients, mix well. Spread in a greased 9 inch round cake pan, cover and refrigerate overnight. Sprinkle with topping, bake for 20 minutes at 350. Drizzle with glaze. (I double this recipe for my crowd and put it in a 9X13 pan.) If you don't have time to prepare it the night before, it will still work to mix it up and put it in the oven immediately.
Topping:
1/4 cup brown sugar
1/4 cup chopped nuts
1/2 tsp cinnamon
1/4 tsp nutmeg
Toss together.
Glaze:
1/2 cup powdered sugar
1/4 tsp vanilla extract
3-4 tsp milk
Combine powdered sugar and vanilla, stir in enough milk to reach desired consistency.
