Today I made it to the grocery store finally. It was a desperate situation around here. Last night we ordered pizza-- I was just too tired to tackle the grocery store and the cooking! So, today I woke up with one task on my mind.
Here is our menu for this week:
Tuesday Night) sliced turkey, stuffing with gravy, black-eyed peas
Wednesday Night) Pork Tenderloin, basmati rice, salad
Thursday Night) French Toast, Sausage
Sunday Lunch) Shredded Roast Beef sandwiches, fries
Monday Night) Pasta Bake, fruit cocktail
Tuesday Night) Chicken Tetrazini, Green beans, cooked carrots
To make dinner for tonight, I had the brainstorm to ask for extra thick slices of deli smoked turkey at the deli. I am going to panfry them in some EVOO, make some Stove Top stuffing and pour some package gravy over the whole thing. Voila! Dinner is served-- and it tastes halfway homemade.
The pork tenderloin is a recipe I got from Pleasant View Schoolhouse blog that sounds very yummy and very easy. I can't wait to try it!
The french toast is actually one of those overnight casseroles. I am going to assemble it first thing in the morning and let it sit all day. As for our Sunday lunch, I planned something easy that my husband can serve straight from the crockpot since it is Mother's Day. And hey, it'll be yummy, less expensive and less stressful than taking all these kids out for lunch that day!
