I have been being blessed by a certain vendor at the farmer's market for the last several weeks. If I come at the very end of the market, he is letting me buy vast amounts of produce for very little money. What a huge blessing!
One of the veggies he has an abundance of is eggplant. What in the world do you do with an eggplant? I received a magazine from Hallelujah Acres and found this recipe. If he has eggplant again this week, I think I'll get one and make it...secretly. I won't tell the children what it is, I'll just offer it up for a snack and see what happens.
Bacon, Why Not?
In a bowl, marinate:
1 large eggplant, thinly sliced lengthwise
3/4 cup EVOO
1 tsp black pepper
2 Tbsp raw honey
4 Tbsp apple cider vinegar
salt to taste
Marinate for 2 hours, then place on dehydrator trays and dehydrate for 12 hours. Turn 'bacon' over and dehydrate for 12 more hours. When finished, this snack will be crispy. Store in a glass jar in the fridge.
