Chocolate Zucchini Cake --  Vegetables in a cake,  Hey it's healthy!! 

1/2 cup Butter
1/2 cup Vegetable oil
1 3/4 cup sugar
2 eggs

 1 tsp vanilla
1/2 cup sour milk

2 1/2 cups flour
4 T cocoa - (or more to taste)  (I usually at least double this! )
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon

2 cups shredded Zucchini 
1 cup chocolate chips

Cream together butter, oil, sugar, and eggs.  Then add vanilla and milk.

Combine the rest of the ingredients excluding the chocolate chips.   Then add to creamed mixture.  Stir in 2 cups shredded Zucchini 

Pour into greased 9X13 pan. Sprinkle with chocolate chips (or more to taste).
Bake at 325 - 40-45 minutes. 

I forgot once and stirred the chocolate chips into the batter.  So I just sprinkled more on top and it turned out fine.  More chocolate can't hurt right?? 

With the chocolate chips on top no frosting is necessary.  In the summer I shred up a few of the zucchini I planted and put them in 2 cup packages in the freezer.  They are ready for my cakes whenever.

My favorite easy bread recipe. 

 

1 egg
1 cup warm water
1 1/2 cups wheat flour
2 cups white flour

1/2 cup sugar
2 T butter
1 tsp salt
1 T yeast

Put all this in a bread machine and use the dough cycle. Shape into loaves, rolls or whatever.  Let rise again and then bake at 350 until tops are lightly browned.  Brush tops with shortening to keep them soft.  Makes 2 loaves. 

 

I run 2 machines at the same time and get 4 loaves each time I make bread.  Sometimes I just make 2 loaves and use the other batch for cinamon rolls or dinner rolls.  

 

Before you think I am oh so natural or a super-homemaker, I use store bought flour, maybe someday I'll be up to grinding my own.... but I'm not there yet.  The equipment is so expensive. 

 

I like to make our bread because

  • It's cheaper than better store brands- we don't like the cheapo "air" bread.
  • When I run out I don't have to run to the store
  • From what I have read it is much healthier
  • It smells soooooo good while baking. 
  • I feel so domestic and wifely.   

I do have to say though that my husband does like the texture of store bought bread for sandwiches.
