Another Redneck Recipe: Full O' Baloney

I double this recipe; the below is for two people:

1 1/2 cups cubed raw potatoes
1 1/2 cups cubed bologna (1/2 lb.)
2 tbsp. minced green pepper
1 can cream of celery soup
cheddar cheese slices (also works with American)

Heat oven  to 350 degrees.  Mix all ingredients except cheese in a 1 1/2 qt. baking dish.  Bake covered 1 hr. 15 min.  Remove cover; top with cheese.   Broil until bubbly and browned.

These are my husband's favorite leftovers to take to work for lunch.  His co-workers love to make fun of this one!

THANK YOU SO MUCH! My son is 36 years old and I made this for him til he turned around 15. He has been asking me to give the recipe to my beautiful daughter-in-law and I could not remember what went in it. I stumbled upon this site and was so blessed to find your recipe. You have made my son's family and this Mimi very happy.
