Wheat, Egg, Dairy, Soy, and Corn-Free Chicken Nuggets

OVEN FRIED CHICKEN NUGGETS (which are safe for children with multiple food allergies)

Mix 1/2 cup safe flour (we use millet), 1 tsp. salt and 1/4 tsp. pepper in a medium to large mixing bowl.

Cut raw boneless chicken (four-six pieces) to preferred nugget size. (Kitchen scissors make this really easy!)

Coat all chicken pieces in flour mixture in the bowl.

Pour light coating of 100% Canola oil over the flour coated nuggets in the bowl. Stir until all pieces have a light coating of oil.

Place chicken in an ungreased 13 x 9 baking dish. Sprinkle paprika over the top of all nuggets and bake for 20-30 minutes at 425 degrees.

This is my children's favorite thing to eat!

Oh, yes. They are allergic to all of the most common foods for allergies as well as several odd foods. The allergies vary by child, though, so it's often difficult to keep straight who can eat what. And one out of the seven children has no known allergies, so he's the only one who gets to go out to eat with us.
