Bubble and Squeek
Tonight's dinner - going on the theme of this weeks BFS - was - a shepherds pie I made a few weeks ago and froze, and then to that, I added some Bubble and Squeak.
What's that you say? You've never heard of Bubble and Squeak?
Now you have to understand, I have British Parents, so I understand this is a frugal British Recipe.
It consists of .. last night or the night before's veggies and potatoes, fried up in a pan. So, because last night I had a combination of zucchini, kale, carrot sautéd in butter and garlic, I added to that more carrots and the baked potatoes that we had last night.. and sautéd in more butter and garlic. Stuart got a nice surprise, there was a piece of chicken in his Bubble and Squeak.. and that's all part of the fun! I had some pieces of celery in mine. I had set out some celery sticks and dip for snack today, and so there was just a few little sticks left over. I chopped them up and added them to the Bubble and Squeak.
Now, there may be an official recipe for Bubble and Squeak, but in my house growing up, this was how we made it.. throw it in, fry it up, serve hot. |
