I don't really know why, since it is still hot and summery here. Maybe it's the "Back to school" feeling, because I have curriculum on the brain. Or maybe just because Violet started soccer already (which seems to happen earlier every year!) I don't know why... but for me, fall means a change of menu that I like... bring on the soups, stews, and crockpot meals... yummy! So, I thought in honor of a. thinking of fall and b. having absolutely NO blog topic ideas today, (LOL!), I will post a favorite recipe. You have to try it! I got this recipe from my sister and doctored it up a little bit, and it is SO good! It is my standard "bring-a-meal-to-a-friend" recipe, because it makes enough for us and another family, too, and because it is so yummy.
Here it is:
Mrs. Incredible's White Bean Chicken Chili
1 Tablespoon Olive Oil
3 16 ounce cans Great Northern Beans
4 cups shredded cooked chicken breast
2 medium onions, chopped
4 cloves minced garlic
2 4 ounce cans chopped mild green chiles
2 teaspoons ground cumin
1 ½ teaspoon dried oregano
¼ teaspoon cayenne pepper
4-6 cups chicken broth/stock, depending on thickness desired
3 cups grated Monterey Jack cheese
1 16 oz sour cream
salt and pepper
1. Heat oil in large pot over medium high heat, add onions and cook until soft.
2. Stir in garlic, chiles, cumin, oregano, and cayenne pepper and sauté 2 minutes.
3. Add undrained beans and chicken stock, bring to boil.
4. Reduce heat and add chicken.
5. Stir and cook until heated through. Add salt and pepper to taste.
6. Add cheese & sour cream and stir in. Remove immediately from heat.
