Basic Cheesecake:

3 (8 oz) packages of cream cheese
3/4 cup white sugar
1 cup sour cream
1 cup heavy cream
3 TBSP flour
1 TBSP vanilla (I use really strong espresso in plac of vanilla at times;)
3 eggs

Cream together cheese and sugar ~ beat until fluffy... then add other ingredients, mix well, pour onto graham cracker/chocolate crust (I made them once ith a brownie crust ~ YUMMY) and bake for 60-70 minutes at 350. Refrigerate overnight.

For the cheesecake bites, I just poured the batter in a lightly oiled pie pan and after it cooled, I stuck it in the freezer until it was really firm. Cut apart the cake in squares and then dipped in melted almond bark.

BTW ~ this is fantastic with melted chocolate &/caramel ice cream topping mixed/swirled in with the batter before baking:)

I also like to add mini chocolate chips (coated in flour first) for chocolate chip cheese cake... or cover the crust with milk chocolate chips before baking.
