This is a recipe that I've been making since I was a kid. I love it and make it any chance I can. It goes especially well with the Irish Stew I just posted.
English Muffin Bread
5-6c. flour
4 1/2tsps yeast
1T. sugar
2tsp. salt
1/4tsp. baking soda
2c. milk
1/2c. water
cornmeal
Combine 3 cups flour, yeast, sugar , salt and baking soda. Heat liquids until very warm(120-130 degrees F.). Add warmed liquids to dry mixture, mix well. Stir in enough of remaining flour to make a stiff batter. Spoon into two 8 1/2x4 1/2 inch loaf pans that have been greased and sprinkled with cornmeal. Sprinkle tops with cornmeal. Cover; let rise in warm place for 45 minutes.
Bake at 400 degrees F. for 25 minutes. Remove from pans immediately. Let cool.
