Annies Easy Risotto
Risotto (pronounce ri-SOE-toe ) is a traditional Italian rice dish.
Risotto is usually cooked on top of the stove, but its easier to bake it in the oven.
1 tbs. Olive
oil
1 Onion, finely chopped
1 or 2 Cloves garlic. Peeled and finely chopped
1 cup of arborio rice (a chewy rice available in supermarkets) Or regular white rice
2 cups Vegetable broth (canned is fine)
2 ½ to 3 cups Frozen chopped spinach
½ cup finely chopped mushrooms
1 Tomato, diced
½ cup soy or dairy parmesan cheese
(optional)
Preheat oven to 400 F. Heat olive oil in a large sautι pan, add onion, and sautι for 1 minute. Add garlic and sautι ½
Minute or so more.
Add rice and stir to coat. Add broth and bring to a boil. Stir in
spinach, mushrooms, tomatoes, and Ό cup of soy or dairy cheese, if
using.
Pour into an oiled casserole dish, top with remaining
cheese if using, cover, and bake for 35 to 40 minutes or until most of
the liquid is gone and rice is tender. Serves 4 to 6.
Note: If you want to make
this without cheese, add Ό tsp. or so extra salt, plus 1-tbs. butter.
If you have any on hand, stir in Ό cup nutritional yeast to make it
taste cheesy. It really works!
