Today the true leaves of our space tomatoes have become clearly visible at the top of the hypocotyl. They are the two emerging leaves between the cotyledons which are where the beginnings of photosynthesis for food is happening right now :)

Lecithin is similar to gluten, but is a soy based product that is sometimes a part of dough enhancer. Dough enhancer is really insurance, so to speak, that your bread will rise and have a nice texture. Lecithin isn't as much of a sure thing, but it does help in rising and works as a mild preservative. Gluten may also be used in combination with lecithing, but I don't use it.

Oh, I love to see your tomato seedlings. I can't get mine to get the second set of leaves before dying out... UGH! I just love reading your nature blog. It's so inspiring to newcomers to the nature world, like me!
