Slice the tomatoes 1/4 in thick. Lightly sprinkle tomatoes with salt. Drain on paper towels for 30 to 60 minutes. Meanwhile, combine cornmeal, Parmesan cheese, flour, garlic salt oregano and pepper in a shallow plate or dish. Dip each tomato slice into the egg, then the cornmeal mixture. In a medium skillet, heat oil over medium high. Fry tomatoes a few at a time for 2 minutes per side or until golden brown. Drain on a paper towel and serve immediately.
Old Fashioned Lemonade
6 lemons
1 1/2 c sugar
2 1/2 qts. ice water
Wash lemons; slice thin. Place in a stainless or enamel flat container. Add sugar. Pound with mallet to squeeze juice from lemon rings. Stir to make syrup. Let stand 20 minutes. Add water to pitcher after putting in beaten lemons. Stir well. Serve within 6 hours.
Spray a large crock-pot for easy clean-up. Put the black beans, corn and half of the salsa in the bottom of the pot. Put the chicken in next (frozen is fine). Top with pinto beans, Rotel and rest of salsa. Cook on low all day or high for 3-4 hours. When chicken is cooked, remove from crock-pot and shred with two forks. Put shredded chicken back into crock-pot and mix with other ingredient thoroughly.
Serve over chopped lettuce with tomatoes, sour cream, cheese and tortilla chips. This can also be served over rice or rolled up in tortillas. Yields about 8 cups.
( I used frozen corn and I don’t like to use can beans, so I prepare my beans first and then use in the recipe.)
I also double this recipe for my family and to have left oversfor the next days lunch.
Okay ladies, here is how it went yesterday with the shopping.
Since we were on vacation last week, we knew that we could use some of our budget money for food and gas this pay period, for the trip. We did really good sticking to the budget. But as expected, we "dipped" a little into this week's money. Things are fine, but just made things a little "interesting" to cover everything.
So, for this week, Jeff had $150 for everything I needed to do. It goes as follow:
Sarah's piano lessons ( for the month) $40
Gas for the week ( not a tank full, lol ) $35
Car wash ( very needed with the salt and such) $10
Groceries ( for just this week) $66 ( $10 was for a SMithville ham for Easter dinner coming up !!! It was only $ .99 a lb !! )
Total for all ................................$ 151 !!!!!
Only $1 over what Jeff had given me !! I did it !!!! I pretty much can deal with whatever he has to give me and it makes me wonder why I need as much as I do on the pay periods where I get my "whole" budget amount. I could be saving some for this year's Christmas already.
The week's menu goes as this:
Monday: Chicken patty sandwiches, chips /dip
Tuesday: Homemade sauce with spaghetti and garlic toast
Wednesday: Sausage, eggs, and biscuits
Thursday: Pork loin chops, rice and veggies
Friday: Home made tacos, chips w/ dip
Saturday: ????
So there it is. I also bought what was needed for sandwiches, salads, and snacks for the week. Of course breakfast items were included in this trip also.
Heat oven to 350 degrees. Whisk eggs, sugar, and spices. Stir in pumpkin and milk. Mix well. Pour into ungreased 13 x 9 pan. In seperate bowl, place dry cake mix and butter. Using pastry blender, cut butter into mix until crumbly. You can use a fod processor for this step and process to pea size crumbs. Sprinkle over pumpkin mix. Sprinkle on pecans and bake for 60 minutes. Serve warm with whipped cream dollop. Serves 15.

I tell you, it smells sooooo good in my house, I am going to be hungry all day !!!!!
Do you have that problem when you use your slow-cooker for your supper meal? I cut up a beef pot-roast this morning, added seasonings and turned it on. Now it is making me so hungry, I can't think straight. lol !!! I plan on adding "stew" vegetables and more beef broth a little later on. I may even bake some home-made bread or rolls to go with it. I will have to see how my day goes from here.
