Give these a try, I actually found them really tasty and I'm not a big bean person
2 (15oz) cans of black beans, rinsed and drained 1 small onion finely chopped (I left this out since we don't eat onions) 2/3 c. breadcrumbs 1 clove garlic minced (I used 2 cloves) 1 T. fresh cilantro or basil, finely chopped (didn't have any to use) 1 t. ground cumin 2 eggs (I used 2 egg whites) beaten 1 sm. jalapeno pepper minced (optional) (I didn't use) salt and pepper
Place beans in bowl and mash with a fork. Add remaining ingredients and mix well. Shape into 6 patties and fry in a little oil on medium heat a few minutes on each side.
(I also topped ours with cheese) |
