Pumpkin Chip Cookies

*The ladies on my message board are going crazy over this recipe that I shared as part of our "favorite fall recipes" discussion.  This recipe originated from one of Brian's co-workers (she's an excellent cook and even does some catering).  I'm not much of a cookie person, but I went crazy over these~ so yummy!  So, I had to ask for the recipe.  I'm sure your family will love  them too~ and they're perfect for  this time of year.  Let me know if you try them.

Ingredients:
1 1/2 cups butter
2 cups brown sugar
1 cup sugar
1 15 oz. can pumpkin
1 egg
1 tsp. vanilla extract
4 cups flour
2 cups quick-cooking oats
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups semi-sweet chocolate morsels

Directions:
Cream butter and sugars.
Beat in the pumpkin, egg, and vanilla.
Combine the flour, oats, soda, cinnamon, and salt~ gradually add to creamed mixture.
Stir in morsels.
Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets.
Bake at 350 for 12 minutes.
Makes: 10 dozen.
*The ladies have been experimenting with different flavors of chips.  Some have tried white chocolate, others dark.  I, personally, prefer milk chocolate over the semi-sweet.  Someone suggested cinnamon or butterscotch.  Another lady recommended adding pecans.  So, feel free to play around with this recipe and make it to suit your taste.  It makes a big batch, so you can divide and make several different kinds.

I want to post the recipe on my blog as well. Heidi, I was a lot like Alison in that I really don't care for pumpkin (I don't like pumpkin pie) ~ it just wouldn't be my first pick. BUT...with the butterscotch chips and pecans, these are deeelicious! I'm with you on the semi-sweet, too. Milk chocolate would've been better.

Have a great day (& evening!)

Heidi,

I am so glad you posted this recipe... it had been on your old blog... then on my MasterCook... then my computer crashed and my DH spent 2 days rebuilding the hard drive. I had thought that all my files were backed up, but... not true! The program I use to back up my computer saved i-Tunes and My Documents. Luckily, I had recently backed up my Quicken.

I have been slowly retyping and replacing my recipe files.

Modern technology can be a pain!

Thank you so much for your comments about Gabriella! She has been a miracle in our lives!

Funny, I was just thinking about the Sushi for One book recently. I haven't received it yet in the mail. There's no rush, but I was wondering about it.

I look forward to entering for the Amy Grant book! God's blessings.

Yum! - Not sure there will be any left for SS class - We really like them - I would like the pumpkin taste to be even stronger not sure if could add more or not - and I'll add more pecans next time around, too - Delicious.
