Thanksgiving Menu and comments

Turkey -
Recipe - http://allrecipes.com/Recipe/Citrus-Turkey-Brine/Detail.aspx then rubbed butter and garlic between the skin and meat. Turned out super awesome. I cooked it upside down then the last hour or so turned breast side up. It was very juicy and flavorful. I will continue using this simple recipe.

Mashed Potatoes-
Did with butter, milk and garlic powder for dh's and with ricemilk and Earth Balance and garlic powder for mine. I want to do more herbs next time.

Stuffing
Dh-I need a new recipe it was with cranberries and apples. My mother did it and didn't listen to the changes in the recipe and turned out decent but horrible for dh. So I need a recipe with sausage and pine nuts again.

Mine- it was a Cashew stuffing and was (ok). I will need a new recipe also. Maybe just use the same recipe as the pinenut one but without sausage.

Green Beans- maybe do lemony or bacon in it next time.

Tossed green salad - something my mother couldn't mess up :)

Rolls- I want to do homemade next time. The ones we had were mediocre.

Olives and Cranberry Sauce.

Vegan Carrot Cake (was ok. if I made it it might have been better, though my mom followed the recipe she still doesn't do well cooking).

HOMESCHOOLING

I worked in daycare, as a preschool teacher, and at the elementary school as a special needs assistant, and I have a big heart for children.

WRITING
Poems have been published in a few small publications. My Original Schoolhouse Thesis for my BS degree in Sociology was published and is in the Linfield College Library. I have a group of poems I would like to self publish sometime. Other than that I have a novel that has the plot done but lots of discription is not there, but I am bored with it right now.

HEALTH

RESEARCH
I love researching things!

OUTDOORS
Camping, hiking, photography, clam digging, rolling down hills with my sons, bike riding, walking etc. The ocean still feels like home to me, when I get on the beach I feel that is where I belong in the world.
