Tempting Treats
I made these the other day to bring to church for the adults during the "coffee break." (my 14 yo made chocolate chip cookies for the kids)
I don't make these very often but they are great with a cup of coffee or tea, and they are similar to shortbread. Shortbread with almond and cherries.....yum.

Chewy Almond-Cherry Bars
3/4 cup almonds
1 cup flour
1/8 tsp salt
3/4 tsp baking powder
8 Tbl butter
3/4 cup plus 2 Tbl sugar
1 large egg
1/4 tsp. almond extract
1/2 cup dried cherries or cranberries
1. Preheat oven to 350. Line an 8-inch square pan with foil.
2. Process almonds with flour in food processor until finely ground. Add salt & baking powder, pulse to mix.
3. Melt butter, remove from heat and stir in sugar. Using wooden spoon, beat in egg and almond extract. Stir in the flour mixture, follwed by fruit. Spread batter evenly in pan.
4. Bake for 20-25 minutes, until edges are golden brown. Cool completely in pan on rack. Lift from pan and transfer to a cutting board. Use a sharp knife to cut into 16 squares. (I cut mine smaller than this, they are fairly rich) May be stored, airtight, for at least one week.
I think this batch was extra-good because they were stored in that cute tin - my mom was de-cluttering and I snagged it. I couldn't pass up a tin with gnomes on it - and look what Mrs. Gnome is doing there on the lid- she's knitting!
Tomorrow I'm going up to my sister's for a couple of days to help her - she's got 2 small children and her back is giving her a lot of trouble, and her husband is away on business for several days. She promises me at least one visit to DSW. (think huge shoe store) We'll see what other trouble we can get into. Dh is driving us up so he can use his Gander Mountain gift cards he's been hoarding saving. Did I mention we don't have much good shopping around here!?! Also, my sister lives within 20 minutes of at least 5 LYS. (None around here) I'm just saying.

Those bars look so good. I just happen to have some dried cherries in my cabinet. I will have to make some. Thanks for the recipe!
