A recipe for fall
The coming of fall always gives me the itch to do some baking, in a way I just don't feel it in the summer. I think I'd love just about anything with pumpkin as one of its ingredients, so no surprise that two of my fav fall recipes are pumpkin-y. I know I posted about these last year but they're good enough to deserve a yearly mention!

These are Barb's pumpkin cookies. So good! ( Go here for the recipe - scroll down to here Oct 27 entry) If you try these, you might want to make a double batch, I'm telling you they are that good. I brought this batch to a gathering recently and they disappeared in a snap.
Here's another recipe I can't stop talking about, from AfricanKelli. If you frequent her
blog you know how often she's cooking up something that makes your mouth water. Here's the pumpkin scone recipe she shared last year:
PUMPKIN SCONES
Preheat oven to 400 deg.
You need:
1 Tblsp butter
1/2 cup sugar
1/4 teaspoon salt
1 egg
1 cup cooked mashed pumpkin (cold)
1 tsp cinnamon or pumpkin pie spice
2 cups Self raising flour (or 2 cups plain flour plus 1 teaspoon baking powder)
Method:
Beat together butter, sugar and salt with electric mixer.
Add egg, then pumpkin and cinnamon, then stir in the flour with a spoon.
Turn on to floured board, knead lightly until the dough comes together, roll out to a thickness of 3cm and cut rounds with a cookie cutter. (I just cut mine into wedges) Place scones right next to each other on a greased baking sheet. Place sheet on top shelf of hot oven for 15-20 minutes. Serve warm or cold.

This is my idea of a perfect fall combination: pumpkin scones with tea (African Autumn- red bush with cranberry & orange-- yummmm!) and a little knitting. Not for today though - we have guests coming for a couple of days so I'm off to change some sheets and mop some floors!
Have a great day!

Hey --

Are you running a bed and breakfast? You have more guests than anyone I know! Make sure your guests are good to my goats, LOL. Thanks for the great pumpkin recipes -- as soon as we dig out from the baked good we have around here, I'll have to try them -- I love pumpkin too. Are the cookies too sweet to have frosting on them?

The best way to get motivated to clean the house is to invite people over. Will the cookies last long enough to share them with the guests? They sure look yummy!

fall baking

I have been hankering to get out my baking sheets and get all floury. Fall brings that out in me too. But I've been so busy with canning and freezing I haven't yet done anything about it.
Perhaps it's time.
