1 1/2 lbs. ground beef

1 med. onion, chopped (optional)

1 15oz. can black beans(rinsed)

1 can corn

8 oz. sour cream

1 c. salsa

flour tortillas, torn into small pieces

8 oz. shredded cheese

1 or 2 chopped tomatoes (optional)

Heat over to 425º. Brown ground beef along with onion, if desired. Meanwhile, combine beans, corn, sour cream and salsa in a bowl. When meat is done and drained, stir into mixture. In a 2 qt. greased casserole dish, layer enough mixture to cover bottom. Arrange half of tortillas on top. Layer on rest of mixture. Add remaining tortillas. Sprinkle cheese on top along with tomatoes, if desired. Bake 10-12 minutes...until heated through and cheese is melted.

This is a "complete meal dish" and very easy.

I make something similar "mexican pie" with layers of tortillas, taco meat (mixed with chorizo if i have it), salsa and cheese. I like to pour enchilada sauce over the whole thing. My kids whine about mexican lasagna (which is like the pie, only rectangular) but something about it being pie makes it magical. Who knew.
