2 cups self rising flour
2 t. baking powder
1/3 c. shortening
2 t. powdered sugar
1 c. buttermilk (if you don't have buttermilk, just take 1t. of lemon juice or vinegar and add to plain milk)
Mix together flour, baking powder and sugar in bowl. Dump in shortening. Cut the shortening into the flour with a fork or pastry cutter. Keep cutting until you have pea size clumps( Hey, this isn't rocket science....if they are a bit bigger then it'll create better layers in the biscuits. DON'T make them smaller than pea size though...okay it's almost rocket science. Ha!). Now pour in the milk. Stir quickly just until the flour mixture is wet. You may need a little extra milk. DON'T OVERMIX. Now pat out lightly on a floured surface. Cut out with a biscuit cutter or a straight edged glass or cup. Put on ungreased baking sheet. You can brush with melted butter. Bake @ 450º for 8-10 minutes. If you like your edges crispy then leave a little space in between the bisuits. If you like for them to rise high and be soft-sided, then butt them up against each other.
Delicious variation: mix in some cheddar cheese or cooked chopped bacon in the end along with the milk. Mix at the same time as the milk so the dough won't be overhandled.
*You can put these in pie pans, cover and freeze for future use. |

I had to share a story that had my Mom laughing when she got home from the grocery store. She left me "cutting the butter into the size of peas" for the very first pie crust I was making all by myself. (I was only 7 or so) When she returned I was STILL cutting the butter into the size of peas. She asked how I was doing it and what was taking so long. I showed her....I was holding the stick of butter and very carefully cutting off little pieces the size of peas!!! I told her it was taking SO long! LOL She just giggled at me and said, Honey there is a quicker way and showed me how to use two butter knives to "cut the butter" into the flour mixture. I still get tickled each time I see those instructions and now I remember my Mom's face as she tried not to laugh out loud at her literal daughter.
