
I've happened on a cool blog where they share crockpot recipes every Thursday. I love using my crockpot and can never have enough recipes for it! Here's one of our favorites
Sopa De Maize
2 c. water
2 boneless, skinless chicken breasts (I throw mine in frozen)
1 16 oz bag frozen corn
1/2 t. cumin
1 t. minced garlic
4 chicken bouillon cubes (I use 4 t. of chicken broth powder)
1 4 oz can diced green chilies
1 c. milk
salt & pepper to taste
Fritos
Salsa
Sour cream
Combine first 7 ingredients in crockpot and cook on low for 7-8 hours or high for 4 hours. Before serving, get out your chicken shears and cut up the chicken into little pieces and then add the cup of milk.
Pour in bowls over fritos. Top with sour cream & Salsa. YUM!
Original recipe calls for cooked chicken, but I love time saving with throwing mine in frozen and then cutting up afterwards. Who likes to cut raw chicken anyway?! This can also be frozen by putting the first 7 ingredients in a ziplock bag or container and tossing in the freezer. You just wait and add the milk after it's unthawed and brought to a boil.
