I wanted to let you peek into my own cookbook.
3+ Meals with 1 Easy Cooking
large roast
Dales
potatoes (enough for for each person)
1 to 2 lbs carrots
1 onion
1 to 2 cups water
I love to get a large roast (frozen). I put it into the crock pot with Dale's seasoning (I pour about 1/4 of the bottles maybe 1/2 of cup?), potatoes, onion, and water. My crock pot has timer I put in on for 8 hours. About 4 hours before I want to eat I put in carrots. When we are ready to eat I dip out the veggies and put them in their own dish, but the meat and gravy I serve from the pot.
Left-overs:
- Some of the gravy/juice I will puree the left-over veggies until smooth. And freeze to make a soup for latter. It is a great base. When I want to cook, I will just drop in a bag of mix veggies to boiling puree. Serve with crackers and sour cream.
- I will take the gravy/juice and freeze in ice cube trays until froze. After solid I drop them into a freezor bag. When I need beef broth I just pop in the cubes.
- I shred the roast. I dump the shreds into a freezer bag pouring a bottle of BBQ over. Zip and Mix. Now freeze and when my family wants BBQ sandwiches I have Homemade! All you need is bread and a pickle! Tip: I have put this in to sandwich bags so that each is a serving size...but put the sandwich bags into a freezer bag.
Chili
1 lb of ground beef
1 lb dried kidney beans
1 lg can of chopped tomatoes
the brown bag chili mix
water
sour cream
shredded cheese
crackers or cornbread
I brown my ground beef when I get home from the store. I usually buy 5 lbs rolls and brown the whole thing. I will put 1 lb packs in the freezor. I take out one of those packs. I get out my friend...the brown bag chili mix. I dump the ground beef, brown bag, tomatoes and kidney beans into my crock pot and enough water to fill my crockpot about 1/2 way up. I cook all day, watching the water level to make sure that my beans don't cook dry. I serve with crackers, cheese, and sour cream on a busy day. OR cornbread, cheese and sour cream on a easier day...lol
Left-overs: I pour into freezor bag with a small bag of corn. I set this in my baking dish and put in the freezor. When frozen solid, I take out my dish. When I take it back out of the freezor, it is already formed to my dish. I just open and tear the bag off the meal and thaw out. I bake this in a 350 oven until boiling hot. Mean while I mix up cornbread. I pour the cornbread mixture over the hot chili and cook until cornbread is done. Serve with cheese!
Ok I don't usually have leftovers of this one...but I thought it would be good to include with the crock-pot recipes
Triple Chocolate Mess
1 package chocolate cake mix (my favorite, dark chocolate)
1 pint sour cream 1 pkg. instant chocolate pudding 1 6oz. bag chocolate chips
1 6 oz bag peanut butter chips 3/4 c. oil 4 eggs 1 c. water
Spray crock pot with non-stick spray. Mix all ingredients. Cook on low for 6-8 hours Try not to lift the lid. Serve with ice cream. Keeps in fridge for a while. Just heat and serve.
