Friday, August 11, 2006 - Chicken Finger Batter

After eating out at Long John Silver's for the first time, my husband requested that I try to duplicate their batter at home. After searching the web, and tweaking a bit, this is what I came up with. This was DELICIOUS on strips of boneless/skinless chicken breast and onion rings.

 

Beat together until smooth:

1 C  flour
1 T baking powder
1 t  baking soda
1/4 t garlic powder
1/2 C cornstarch
1 t salt

1 t seasoned salt
1 C water

Dip chicken (or fish or onion slices) into batter and deep fry at 400* until cooked through and golden brown.
